It’s officially a gloomy Fall day here in New Jersey. It’s cool and rainy with no sunlight in sight. This weather has a pretty big impact on my mood so I decided it’s time to do some baking. I love baking in the Fall cause it warms up the house and the smell of a fresh baked cake is better than any Fall scented candle. Today I needed some soul hugging cinnamon pound cake. I got this recipe from my great aunt Rosemary. It’s a pound cake made with a pretty simple ingredient list which allows for some wiggle room to try new things. This time I chose to add some sliced apple to it and let me tell you! It’s SO good! I’m just going to share the regular recipe which you can add to or substitute just about anything and make the recipe yours!
I tried to record a video to go along with the recipe and directions but during the importing and editing process I somehow messed up and lost about half of my footage 😦
So, without rambling forever here it is!
½ lb. Butter
2 cups sugar
2 tsp vanilla
1 pt. sour cream
4 cups flour
2 tsp baking powder
2 tsp baking soda
1 – Cream together butter and sugar
2 – Add eggs and vanilla
3 – Add sour cream
4 – Gradually add flour
5 – Add baking powder and baking soda last
1 tsp cinnamon
½ cup sugar
¼ cup brown sugar
I recommend using a bundt pan but you can use anything you’d like just remember to grease and flour the pan before baking. If you chose to do this filling or try out something else, fill up your pan with half the batter then add half the filling and cut it into the batter with a knife. Add the rest of the batter then use the remainder of the filling on top and cut it into the batter again. This bakes at 350 degrees for a little over an hour. Test it after an hour and then every 5 minutes. (Usually take about an hour and 15 minutes for me)
